I’m definitely not a baker, but these couldn’t be any easier to make. With a base of only 5 ingredients and a few optional extras - no flour, no eggs, no stress. Perfect for a high fibre/protein breakfast or snack.
These healthy breakfast oat cookies are a good source of protein and fibre, and are perfect for a healthy on-the-go breakfast or snack.
Ingredients:
¾ cup oats
2 ripe bananas
1 tbsp of almond butter
1 tsp cinnamon
A handful of dried fruit (I used chopped dates but dried apricots or raisins work well too).
Optional extras:
A handful of walnut pieces
A sprinkle of dark chocolate chips
1 tbsp of desiccated coconut
1 tbsp of protein powder
Method:
• Combine dry ingredients in a bowl - oats, cinnamon, dried fruit, nuts etc.
• Mash the bananas with a fork in another bowl, add the almond butter, then pour into the dry food mix and combine.
• Preheat oven to 200°C and line a baking tray with parchment paper. Take a heaped tbsp of the mix and pat it down into a flat cookie shape on the baking tray. Repeat until the mixture is finished.
• Heat in the oven for 20 minutes then leave to cool for 5 minutes before eating.
That's it! This should make around 8 cookies and you can store for up to 3 days.
