Seasonal spotlight: Brussels sprouts

The most nutrient dense food on your plate this Christmas is the delicious Brussels Sprout.

Part of the cruciferous vegetable family, they contain a high concentration of glucosinolates, which support the body's detoxification processes.


Sprouts also provide a high level of fibre, protein, folic acid and beta-carotene, and just a one-cup serving will meet your daily requirement for vitamin C and vitamin K.


Tip:

Slice them in half and let them sit for 5 minutes before cooking to release the health-promoting qualities.

If you're a hater, the best way to bring out the sweetness and tone down the bitterness is by roasting: Toss in a little olive oil, salt and pepper and roast for 20 mins until crispy.
